Haupia
Jen Patel, 6-8 servings
- 1/3 c cornstarch
- 1/2 c sugar
- 1/8 t salt
- 24 oz coconut milk (extract from meat of the nut, not juice)
Combine cornstarch, sugar and salt. Stir in 1/2 c coconut milk. blend to form smooth paste. Heat remaining milk and add cornstarch mixture. Cook, stirring frequently, for about 20 minutes or until thickened. Pour into 8x8x2 inch baking pan. Cool and chill. Cut into 1 1/2 inch squares.
